Our wine cellar is one of the oldest wine cellars of the village and its history goes back to the 12th century. It can be seen quite impressively on the walls in the upper basement, which are worth seeing because the old loopholes and their structural substance. Here we producing the entire production of our winery in confined spaces.
We are using the predetermined level differences as an advantage to make the transport of wine as gently as possible, any unnecessary pumping is avoided. Starting from the pneumatic press, the free fall is fully used right to the settling tanks.
In our cellar you will find next to our up to 50 years old wooden barrels the latest technology. We are working with dual-chamber stainless steel vats and temperature controlled fermentation to achieve the maximum of fruit and purity of each wine! Beside our Nuovo Castello and Spätrot-Rotgipfler we are producing all our wines authentic! The regional varieties Zierfandler and Rotgipler are stored in stainless steel tanks as well as in large and small wooden barrels!
